Burgoo: What Is It And How Is It Made?

You may have had burgoo if you have ever been to Kentucky or spent any time in the area around the Derby.  

For your own Kentucky Derby celebration (or any time!), it's a good idea to familiarize yourself with the history, components, and preparation of burgoo. 

Because burgoo recipes are passed down through families and individual cooks, there are more variations than anyone can possibly tally. 

Some racegoers believe that a bowl of burgoo, which is rich in meats, veggies, and spices, and a glass of Kentucky bourbon, will bring them good luck before the big event.

But it's also a mainstay at barbecue establishments all around the state all year round. 

While the exact contents of burgoo are up to interpretation, it typically features a variety of meats and a plethora of vegetables, such as maize, potatoes, and lima beans.  

Cabbage is optional in some Kentucky burgoo recipes but is required in ours.
